In my post a few days ago I made a couple of mistakes. This chain is a large chain with a broad international presence. It is Belgian.
That may explain how such good bread can be replicated. Sorry Panera, bread that looks good is not always good. But the Belge have talent for organization, Foodservice, and business. It just rankles my French Sympathies that they use The Language.
